Restaurant Aubergine’s chef and proprietor, Harald Bresselchmidt, will reflect each of the five evolutionary flavour profiles with his own culinary interpretation of its evolving character… from the young Louis XIII to the 20, 40, 70 and 100 year old legendary cognac.
